Superfoods January Salad
This is a wonderful, healthy salad, excellent served with lamb, white fish or poultry.
Feeds 4 as a side dish
Ingredients:
150g quinoa
150g Camargue red rice
75g pomegranate seeds
Bunch of coriander
Handful of mint leaves
1 lime
70ml extra virgin olive oil
50g shelled pistachio nuts
75g feta cheese
1 sweet potato
1. Cook quinoa and Carmague rice as per the instructions. Cool.
2. Chop the sweet potato into 1 inch chunks, drizzle with 3 Tbsp oil and season with salt and pepper. Roast at 180 degrees C for 30 mins until tender and golden.
3. Chop herbs.
4. Mix rice, quinoa, sweet potato. Stir in lime juice, remainder of oil, season with salt and pepper.
5. Scatter with pomegranate seeds, crumbled feta, pistachio nuts and herbs.
